Surprise Prize Cupcakes
1 pkg. (18.25 oz) plain Chocolate cake mix (Pillsbury...)
1 1/3 cup water
3 large eggs
1/3 cup vegetable oil
1 pkg. (18 oz) Nestle Toll House Refrigerated Chocolate Chip Cookie Dough
1 container Chocolate Frosting
Semi-Sweet mini chocolate chips
Preheat oven to 350* F. Line 24 muffin cups with paper liners. Beat cake mix, water, eggs and oil in a large mixing bowl on low speed for 30 seconds. Beat on Medium speed for 2 minutes or until smooth. Spoon about 1/4 cup batter into each cup, filling about 2/3 full. Cut cookie dough into 24 pieces; roll each into a ball. Place one ball of dough in each muffin cup; pressing it to the bottom of the cup (batter won't quite cover them. Bake for 19 to 22 minutes or until top springs back when gently touched. Let stand for 15 minutes. Remove from pan and place on a wire rack to cool completely. Spread each cupcake with frosting and sprinkle with chocolate chips.

California Style Chicken

2 Tablespoons olive oil
2 teaspoons minced garlic
2 teaspoons grated lemon rind
4 Tablespoons lemon juice
1 Tablespoon honey
1/4 teaspoon each salt & pepper
1 teaspoon dried oregano
1/2 teaspoon dried thyme
pinch red pepper flakes
Cut off all excess fat from chicken. Rub 1 Tablespoon oil onto sides and bottom of a baking dish. Rub garlic onto chicken; place skin side down in baking dish. Sprinkle with lemon rind. Combine remaining oil, lemon juice and honey. Pour over the chicken. Sprinkle with salt, pepper, oregano, thyme and red pepper. Bake at 400* F. for 30 minutes. Turn chicken and bake another 20 minutes. Baste the chicken during the last 20 minutes.
