1 1/2 pounds pork strips
1 egg, beaten
1/2 cup flour
1 cup shortening
1/4 teaspoon salt
1/8 teaspoon pepper
8 fluid ounces pineapple chunks
1/2 cup brown sugar
1/2 teaspoon salt
2 tablespoons cornstarch
1/3 cup vinegar
1 tablespoon soy sauce
3/4 cup green bell pepper, diced
1/4 cup onion
Dice pork strips into 1'' cubes. Roll in beaten egg then into flour. Fry in shortening until browned; drain. Season with salt and pepper. Set aside. Drain pineapple chunks; reserving the juice and adding water to make 1 CUP. Cook the reserved pineapple juice, brown sugar, salt, cornstarch, vinegar, and soy sauce in a saucepan until just thickened. Add the pork, diced green bell pepper and onion, and the reserved pineapple chunks; cover and heat through.
